Sweet Potato Waffle Burgers

Sweet Potato Waffle Buns
2 medium sweet potatoes, cooked & mashed
Salt + pepper, to taste
2 eggs
(Optional: add 1 egg or a little almond flour if you need help binding)
Garlic Onion Burger Patties
1 lb 93/7% grass-fed ground beef
1/4 cup chopped onion
1 tbsp minced garlic
Salt + pepper, to taste
Toppings
Ketchup
Pickles
Beet Strawberry Salad
Spring mix greens
Cooked beets, chopped
Fresh strawberries, chopped
Simple Balsamic Dressing
Balsamic vinegar
Apple cider vinegar
Olive oil
Drizzle of raw honey
Instructions
1. Prep the Sweet Potatoes
Pierce sweet potatoes with a fork.
Microwave on high for 12–15 minutes, flipping halfway through, until very soft.
Let cool slightly, then peel (optional) and mash in a bowl.
2. Make the Sweet Potato Waffles
Mash cooked sweet potatoes in a bowl.
Season with salt and pepper.
Preheat waffle iron and lightly grease.
Scoop mixture into waffle iron and cook until golden and crispy.
Set aside and keep warm.
3. Make the Garlic Onion Burgers
In a bowl, mix ground beef, chopped onion, minced garlic, salt, and pepper.
Form into 4 equal patties.
Heat a skillet over medium-high heat with a drizzle of oil or butter.
Cook burgers 3–5 minutes per side, or until desired doneness.
4. Assemble the Waffle Burgers
Place one sweet potato waffle on a plate.
Add a burger patty.
Top with ketchup and pickles.
Finish with another sweet potato waffle on top.
5. Make the Beet Strawberry Salad
In a bowl, toss spring mix, beets, and strawberries.
Whisk together balsamic vinegar, apple cider vinegar, olive oil, and honey.
Drizzle over salad and toss to combine.
