Garlic Hot Honey Chicken & Sweet Potato Sheet Pan

Ingredients:

  • lb chicken breast, sliced or cubed

  • 1 large sweet potato, cubed

  • 1 cup broccoli florets

  • 1 zucchini, sliced

  • 1 bell pepper, sliced

  • 1 tbsp olive oil

  • 2–3 cloves garlic, minced

  • 1–2 tbsp hot honey (drizzle on top at the end or before roasting — your call)

  • Salt & pepper, to taste

  • Paprika + garlic powder

  • Fresh basil or parsley (optional)

  • 2–3 tbsp crumbled feta (for topping)Instructions:

  1. Preheat oven to 400°F.

  2. Toss sweet potatoes with oil + seasonings and bake 10 minutes first.

  3. Add chicken + other veggies to the tray, season everything, and roast 20–25 minutes.

  1. Roast the Sweet Potatoes First

  • Preheat oven to 400°F.

  • Toss sweet potato cubes with a little olive oil, salt, pepper, garlic powder, and paprika.

  • Spread on a sheet pan and roast 10 minutes alone.

2. Add Chicken + Veggies

  • In a bowl, toss chicken, broccoli, zucchini, and bell pepper with:

    • Olive oil

    • Minced garlic

    • Salt + pepper

    • Paprika

  • Add everything to the sheet pan with the sweet potatoes.

  • Roast 20–25 minutes, or until chicken is cooked through.

3. Finish with Hot Honey + Feta

  • Drizzle hot honey over the entire tray right out of the oven.

  • Sprinkle crumbled feta on top.

  • Add fresh herbs if you want extra brightness.
