Hot Honey Breakfast Tacos
Light, flavorful, and packed with protein, these tacos have quickly become a staple for me. The combination of crispy turkey bacon, sautéed veggies, and soft scrambled eggs creates a delicious base, and the touch of hot honey ties it all together. They’re quick, wholesome, and the perfect option when you want something satisfying without feeling heavy.
Ingredients
3 organic eggs
2 slices hickory-smoked uncured turkey bacon (Columbus brand, finely chopped)
½ bell pepper, diced
¼ onion, diced
2 tsp minced garlic
Salt & pepper, to taste
Handful of finely chopped spinach
2 Siete Almond Flour Tortillas
Hot honey (Trader Joe’s or Mike’s Hot Honey)
Red chili flakes
Sprinkle of parmesan cheese
Instructions
Heat a skillet over medium heat with a light drizzle of olive oil. Add the onion, bell pepper, turkey bacon, and garlic. Sauté until the bacon is golden and the veggies are softened.
In a mixing bowl, whisk the eggs with salt and pepper.
Pour the eggs into the skillet and gently scramble until cooked through. Stir in the chopped spinach during the last minute of cooking.
Warm the tortillas in the microwave for 30 seconds.
Divide the scrambled egg mixture between the tortillas.
Finish with a drizzle of hot honey, a pinch of red chili flakes, and a sprinkle of parmesan.
Serve warm and enjoy!
