Ingredients (makes 6 large muffins)

Wet

  • 2 medium ripe bananas, mashed

  • 2 large eggs

  • ¾ cup 0% plain Greek yogurt

  • 1 tbsp natural peanut butter

  • ¼ cup pure maple syrup

  • 1 tsp vanilla extract

Dry

  • 1 cup oat flour

  • ¼ cup almond flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp cinnamon

  • Pinch of salt

Add-ins

  • 90 g unsweetened dark chocolate

Instructions

  1. Prep: Preheat oven to 375°F (175°C). Line or grease a 6-cup muffin pan.

  2. Mix Wet: In a large bowl, mash bananas until smooth. Whisk in eggs, Greek yogurt, peanut butter, maple syrup, and vanilla.

  3. Mix Dry: In a separate bowl, whisk oat flour, almond flour, baking powder, baking soda, cinnamon, and salt.

  4. Combine: Gently fold dry ingredients into wet mixture until just combined—do not overmix.

  5. Add Chocolate: Fold in chopped dark chocolate.

  6. Bake: Divide batter evenly among 6 muffin cups. Bake 25-30 minutes, or until a toothpick comes out mostly clean (a little melted chocolate is okay!).

  7. Cool: Let cool in the pan for 5 minutes, then transfer to a wire rack to finish cooling.
