Banana Chocolate Chip Muffins
These chocolate chip banana muffins are my go-to when I need a little sweet treat! They are made with clean ingredients and are seriously so yummy! I mean, who doesn’t love a muffin paired with their coffee in the morning?! It’s a perfect afternoon snack or even a little sweet treat after dinner. Recipe: (Makes 12 small muffins)
Ingredients:
Wet
2 medium ripe bananas, mashed
2 large eggs
¾ cup 0% plain Greek yogurt
1 tbsp natural peanut butter
¼ cup pure maple syrup
1 tsp vanilla extract
Dry
1 cup oat flour
¼ cup almond flour
1 tsp baking powder
½ tsp baking soda
½ tsp cinnamon
Pinch of salt
Add-ins
90 g unsweetened dark chocolate
Instructions
Prep: Preheat oven to 375°F (175°C). Line or grease a 6-cup muffin pan.
Mix Wet: In a large bowl, mash bananas until smooth. Whisk in eggs, Greek yogurt, peanut butter, maple syrup, and vanilla.
Mix Dry: In a separate bowl, whisk oat flour, almond flour, baking powder, baking soda, cinnamon, and salt.
Combine: Gently fold dry ingredients into wet mixture until just combined—do not overmix.
Add Chocolate: Fold in chopped dark chocolate.
Bake: Divide batter evenly among 12 muffin cups. Bake 25-30 minutes, or until a toothpick comes out mostly clean.
Cool: Let cool in the pan for 5 minutes, then transfer to a wire rack to finish cooling.
Tips & Nutrition Notes
Maple Syrup: For a lower-calorie option, you can use a sugar-free, monk fruit-based syrup like Lakanto. I used this because it was what I had in the fridge! For a classic taste, use regular pure maple syrup (I love the Kirkland one from Costco). The macros for both versions are listed below.
Chocolate Chips: I use about half of the chocolate chips (45g) in the batter and then sprinkle the other half (45g) on top of the muffins right before baking. This ensures you get chocolate in every bite and a nice melted top!
