Refreshing Tropical Pico

This tropical pico is one of my go-to toppings for salmon bowls because it adds the perfect balance of sweet, fresh, and zesty flavors. It takes just minutes to prep but instantly levels up simple salmon and rice by adding freshness, texture, and a burst of tropical flavor. It’s light, refreshing, and seriously addictive—the kind of simple add-on that makes healthy meals feel exciting and restaurant-worthy.

Ingredients:

  • 1 ripe mango, diced

  • 1 cucumber, diced

  • ¼ red or white onion, finely chopped

  • 1 cup grape tomatoes, quartered

  • Juice of ½ lime

  • Juice of ½ lemon

  • Fresh cilantro, finely chopped (to taste)

  • Sea salt, to taste

Instructions:

  • Dice mango and cucumber into small, even pieces.

  • Finely chop onion and quarter the grape tomatoes.

  • Add everything to a bowl.

  • Squeeze in lime and lemon juice.

  • Toss with fresh cilantro and a pinch of sea salt.

  • Taste and adjust citrus + salt as needed.

Optional Tips:

  • Add finely diced jalapeño for a spicy kick

  • Swap cucumber for jicama for extra crunch

  • Add avocado for healthy fats and creaminess.
