Peanut Butter Chocolate Chip Protein Balls
Ingredients:
1 cup rolled oats
1/2 cup peanut butter
1 tbsp chia seeds
1 tbsp ground flaxseed
1 tbsp hemp seeds
1/2 cup dark chocolate chips
1/3 cup raw unfiltered honey
dash of vanilla
dash of salt
Instructions:
Prepare the Oat Flour – Add the rolled oats to a blender or food processor and blend until they reach a fine, flour-like consistency.
Mix the Dry Ingredients – In a large mixing bowl, combine the oat flour, chia seeds, ground flaxseeds, and hemp seeds. Stir until everything is well incorporated. I love using my kitchenaid to mix everything together!
Blend the Wet Ingredients – In a separate bowl, mix together the peanut butter, honey, salt, and a splash of vanilla extract until smooth and creamy.
Combine Everything – Pour the peanut butter mixture into the dry ingredients and mix well. Once fully combined, fold in the chocolate chips for an extra delicious touch.
Form the Protein Balls – Using a small cookie scoop or spoon, portion out the dough and roll it between your hands to form bite-sized protein balls.
Store & Enjoy – Place the protein balls in an airtight container and store them in the fridge or freezer. They’re the perfect snack to have on hand whenever you need a quick energy boost!
