Cozy Chicken Noodle Soup

Ingredients:

•1 tbsp olive oil or avocado oil

• ½ small onion, diced

• 2–3 cloves garlic, minced

• 1 tbsp fresh grated ginger (or ½ tsp powdered)

• 2 medium carrots, sliced

• 2 celery stalks, sliced

• ½ tsp turmeric

• 6 cups bone broth

• 1 tsp sea salt (adjust to taste)

• ½ tsp black pepper

• 1 bay leaf (optional)

• 2 cups shredded cooked chicken (rotisserie, poached, or leftover)

• 2 cups egg noodles or gluten-free noodles (I used jovial bow-tie gluten-free noodles)

• Juice of ½ lemon

• Fresh parsley for garnish

Instructions:

1. Sauté aromatics:

Heat oil in a large pot over medium heat. Add onion, garlic, and ginger. Cook 2–3 minutes until fragrant.

2. Add veggies and spices:

Stir in carrots, celery, turmeric, salt, and pepper. Cook another 3–5 minutes to soften the veggies slightly.

3. Simmer broth:

Pour in chicken broth and add the bay leaf. Bring to a boil, then lower to a gentle simmer for 10 minutes.

4. Add chicken and noodles:

Stir in shredded chicken and noodles. Cook 7–10 minutes, until noodles are tender.

5. Finish with healing touches:

Remove bay leaf. Stir in lemon juice and sprinkle with parsley. Taste and adjust salt/pepper as needed.
